Aloo Paratha

Who would say no to a North Indian cuisine famous all over India?

Whether in the South, East, or West, people enjoy this delicious dish till its

last bite.

Today I will share with you all my favourite recipe of Aloo Paratha. Every

individual has their style of making it but, I will share my tricks and

techniques to help you get the perfect restaurant-style Aloo paratha. So

let’s get started….

First, to prepare the dough we will take 2 cups of whole wheat flour,

then add 1 tsp of salt, ½ tsp of carom seeds (ajwain),2 tsp of ghee, 2 tsp of

oil, and here comes the secret ingredient that is gram flour (besan) which

will help to get that crisp and then add water as required and make a soft

dough. Make sure the is not too hard like we use for puri and kachori, and

for which, knead the dough properly. Cover with a muslin cloth and set

aside for 20 minutes or till in use.

By now we completed part 1 of the recipe and now we'll prepare the filling

of the paratha which we can call the charm of the recipe. First, boil 2 large

potatoes and mash them in a bowl. Put a pan on gas and add 1 tsp ghee

then put some jeera, add 1-inch grated ginger in the pan, add the mashed

potato in then add salt to taste, ½ tsp coriander powder, 1 tsp chili powder,

½ tsp cumin powder, ½ tsp fennel seeds, 1 tsp garam masala, ¼ tsp

amchur powder turn off the gas and then add 2-3 finely chopped green

chilies, 1 tbsp fresh coriander. Now mix the filling in the pan well and

ensure no lumps are left. Let the filling cold down.

Now we are at the final stage wherein we will fill the dough with a

generous amount of filling and flatten it with a rolling pin until even from

all sides and edges. Put a pan on low flame add ghee or oil to the pan and

heat it. Add the prepared paratha and roast on both sides for 30 seconds

each, flip over and brush with ghee, flip over and roast till brown spots

appear.

Place the cooked paratha on a plate and garnish it with a cube of butter,

along with yogurt or pickles and serve it piping hot.
